At El Beso de Fruta, the fruit sets the course. Each preserve starts with the fruit and its own characteristics:
its water content, sweetness, acidity, and natural pectin. We make the most of each fruit's natural processes
during cooking and add only what is necessary to preserve it: sugar, lemon juice, and pectin.
Each fruit releases its juices differently when cooked.
Heat, cooking time, and the precise moment to add the lemon and sugar help release and make the most of the natural pectin of the fruit.
